Wholemeal Banana Bread

Naturally sweet, no refined sugar, scaled for 2 bananas.

INGREDIENTS

• 2 ripe bananas, mashed
• 2 large eggs
• 3 tablespoons honey or maple syrup
• 55g melted butter or olive oil
• 150g wholemeal flour
• 50g normal flour
• 1 teaspoons baking soda
• 1 teaspoons cinnamon
• sum cracks of salt
• 1 teaspoons vanilla extract

STEPS
1. Prep: Heat oven to 175°C. Line a small loaf tin.
2. Wet mix: Mash 2 ripe bananas, mashed, then whisk in 2 large eggs, 3 tablespoons honey or maple syrup, 60 milliliters melted butter or olive oil and 1 teaspoons vanilla extract.
3. Dry mix: Stir in both flours, the teaspoon of baking soda, the teaspoon of cinnamon and salt. Mix until just combined, don't overmix!!
4. Bake: Pour into tin and bake until a skewer comes out clean. 40mins, convection on.
