Simple Brownies

Fudgy, classic one-bowl brownies

Ingredients

  • 115 g unsalted butter
  • 200 g caster sugar
  • 50 g cocoa powder
  • 2 large eggs
  • 4.9 ml vanilla extract
  • 65 g plain flour
  • 1 1/4 ml salt

Steps
1. Heat oven to 180°C. Line an 8-inch square tin with baking paper.
2. Melt 115 g unsalted butter, then stir in 200 g caster sugar and 50 g cocoa powder until smooth.
3. Mix in 2 large eggs one at a time, then 4.9 ml vanilla extract. Beat well until glossy.
4. Fold in 65 g plain flour and 1 1/4 ml salt until just combined. Don’t overmix.
5. Pour into tin and bake until the top is set but centre still slightly soft.

6. Cool fully in the tin before cutting into squares.

 

Notes:
Slightly underbaking = fudgier. Add 100g chocolate chips if you want them richer.
